Mushroom, Caramelised Onion and Camembert Cheese Tarts

Ingredients:

  • 1 roll puff pastry
  • 2 medium onions, sliced and sautéed in a little olive oil till golden brown and cooked
  • 200g mushrooms, sliced and cooked in a little olive oil, seasoned
  • 1 FIRST CHOICE French Camembert cheese, sliced
  • Fresh thyme
  • Egg wash (1 egg beaten with 30ml FIRST CHOICE Milk)

Preparation method:

  1. Preheat the oven to 200°C and line a baking tray with baking paper.
  2. Unroll the pastry and use a pastry cutter or sharp knife to cut 8 rectangles of about 12cm x 9cm. Use a knife to score a crust around the outside of each tart.
  3. Transfer the tarts to the prepared baking tray and brush the crust with egg wash.
  4. Spread some caramelised onion in the centre of each tart, top with slices of the cheese and lastly some mushrooms.
  5. Bake the tarts for about 15 minutes until golden brown and puffed.
  6. Best served immediately with some fresh thyme and a drizzle of honey.
