Marinated Chicken and Corn Salad with Passionfruit Dressing

Ingredients:
MARINATED CHICKEN
- 4 chicken fillets
- 30ml lemon juice
- 15ml olive oil
- 5ml lemon zest
- 1 garlic clove, crushed
- 5ml chopped dill
DRESSING
- 30ml lemon juice
- Zest of 1 lime
- 30ml olive oil
- 10ml Dijon mustard
- 45ml First Choice Passionfruit Dessert Topping
- 1 garlic clove, crushed
- Salt and black pepper
SALAD
- 500ml cos OR romaine lettuce
- 2 corn on the cob, cooked, grilled and sliced off the cob
- 2 avocadoes, sliced
- 15 ml chopped dill
- 1 finely sliced red onion or shallot
- 60ml peppedews OR peppers, thinly sliced (Optional)
Preparation method:
- TO MARINATE THE CHICKEN: Combine the lemon juice, olive oil, zest, garlic and dill and marinate the chicken for at
least 30 minutes. - Combine all the dressing ingredients and mix very well. Keep aside
- Heat a griddle pan and grill the drained chicken for about 3 minutes on each side until golden brown and cooked
- Season with salt and cover till needed.
- Toss together all the salad ingredients, add some dressing and spoon onto serving plates
- Top with the chicken and serve
