Ingredients:

MARINATED CHICKEN

  • 4 chicken fillets
  • 30ml lemon juice
  • 15ml olive oil
  • 5ml lemon zest
  • 1 garlic clove, crushed
  • 5ml chopped dill

DRESSING

  • 30ml lemon juice
  • Zest of 1 lime
  • 30ml olive oil
  • 10ml Dijon mustard
  • 45ml First Choice Passionfruit Dessert Topping
  • 1 garlic clove, crushed
  • Salt and black pepper

SALAD

  • 500ml cos OR romaine lettuce
  • 2 corn on the cob, cooked, grilled and sliced off the cob
  • 2 avocadoes, sliced
  • 15 ml chopped dill
  • 1 finely sliced red onion or shallot
  • 60ml peppedews OR peppers, thinly sliced (Optional)

Preparation method:

  1. TO MARINATE THE CHICKEN: Combine the lemon juice, olive oil, zest, garlic and dill and marinate the chicken for at
    least 30 minutes.
  2. Combine all the dressing ingredients and mix very well. Keep aside
  3. Heat a griddle pan and grill the drained chicken for about 3 minutes on each side until golden brown and cooked
  4. Season with salt and cover till needed.
  5. Toss together all the salad ingredients, add some dressing and spoon onto serving plates
  6. Top with the chicken and serve
