Lemony Chicken with Sundried Tomatoes and Herbs

Ingredients:

  • 4 chicken fillets
  • 5g garlic and herb seasoning
  • 5g chopped rosemary
  • 20ml olive oil
  • 2 shallots or small onions, chopped
  • 2 garlic cloves, crushed
  • 80g drained sundried tomatoes in oil, lightly chopped
  • 200ml chicken stock
  • 200mI FIRST CHOICE cream
  • 5ml corn flour mixed with a little water to make a paste
  • 30g grated parmesan cheese
  • Salt and black pepper to taste
  • Zest of 1 lemon

Preparation method:

  1. Pound the chicken fillets between 2 pieces of baking paper to flatten and season with the garlic and herb, rosemary, salt and pepper.
  2. Heat the olive oil in a frying pan and cook the chicken for a few minutes on each side until golden brown. Remove from pan and keep aside.
  3. Add the chopped shallots and cook for a few minutes then add the garlic and sundried tomatoes.
  4. Add the stock, cream and corn flour paste to the pan and bring to a gentle simmer.
  5. Add the lemon zest and the chicken and simmer until reduced and thickened.
  6. Add the parmesan cheese and serve immediately with crusty bread or mashed potatoes.

Chopped herbs and crusty bread or mashed potatoes
