Ingredients:
- 4 chicken fillets
- 5g garlic and herb seasoning
- 5g chopped rosemary
- 20ml olive oil
- 2 shallots or small onions, chopped
- 2 garlic cloves, crushed
- 80g drained sundried tomatoes in oil, lightly chopped
- 200ml chicken stock
- 200mI FIRST CHOICE cream
- 5ml corn flour mixed with a little water to make a paste
- 30g grated parmesan cheese
- Salt and black pepper to taste
- Zest of 1 lemon
Preparation method:
- Pound the chicken fillets between 2 pieces of baking paper to flatten and season with the garlic and herb, rosemary, salt and pepper.
- Heat the olive oil in a frying pan and cook the chicken for a few minutes on each side until golden brown. Remove from pan and keep aside.
- Add the chopped shallots and cook for a few minutes then add the garlic and sundried tomatoes.
- Add the stock, cream and corn flour paste to the pan and bring to a gentle simmer.
- Add the lemon zest and the chicken and simmer until reduced and thickened.
- Add the parmesan cheese and serve immediately with crusty bread or mashed potatoes.
