Ingredients:
MARINADE
- 50ml soy sauce
- 50ml FIRST CHOICE Honey
- 15ml freshly grated ginger
- 2 garlic cloves, crushed
- 5ml freshly ground black pepper
- 15ml sesame oil
- Zest and juice of 1 lime
- 10ml fish sauce
- 1 red chilli, chopped
PORK AND VEGETABLES
- 400g pork fillet, cut into thin strips
- 15ml cornflour
- 15ml oil
- 300g broccoli (use tenderstem)
- 1 red pepper, cut into strips
- 1 yellow pepper
TO SERVE
- 80ml chopped spring onions
- 300g rice noodles, soaked in boiling water for 10 minutes, drained
- Toasted sesame seeds for sprinkling
- Fresh coriander for serving
Preparation method:
- Mix the pork and the cornflour together.
- Combine all the marinade ingredients together and mix well to combine.
- Add half of the oil in a hot frying pan and stir fry half of the pork until cooked and golden brown. Repeat with the rest of the meat. Season lightly.
- Add the rest of the oil to the pan and add the broccoli and red peppers. Cook whilst stirring until vegetables are tender.
- Add the meat and the marinade to the pan and toss well together.
- Spoon onto the noodles and sprinkle over the toasted sesame seeds and fresh coriander.
