Feta, Olive and Herb Muffins

Ingredients:
Feta Crumble:
- 20g FIRST CHOICE Butter at room temp
- 60g flour
- 50g FIRST CHOICE Feta
- 2,5ml garlic and herb spice
Muffins:
- 300g flour
- 20ml baking powder
- 15ml castor sugar
- 10ml garlic and herb spice
- 5ml smoked paprika
- 60ml finely chopped herbs of choice (chives, parsley, rosemary)
- 100g FIRST CHOICE Mature Cheddar Cheese, grated
- 100g FIRST CHOICE Feta, crumbled
- 2 eggs
- 100ml sunflower oil
- 250ml FIRST CHOICE UHT Milk
Preparation method:
To make the crumble:
1. Rub the butter into the flour, then mix in the feta, garlic and herb spice. The mixture must be crumbly. Set aside in the refrigerator.
To make the muffins:
1. Preheat the oven to 180 °C. Line a 12-hole muffin pan with muffin papers or grease very well.
2. Sift the flour and baking powder into a bowl. Add the sugar, garlic and herb spice, smoked paprika, herbs, grated cheddar and the feta and stir to combine.
3. In a separate bowl, combine the eggs, milk and oil. Whisk together.
4. Add the wet ingredients to the dry ingredients and mix until just combined. DO NOT overmix the batter.
5. Spoon the batter into the lined muffin pan and top with the crumble.
6. Bake for about 20 minutes or until cooked through and golden brown.
7. Sprinkle with chopped herbs just before serving.
