Ingredients:
- 150g icing sugar, sifted
- 125g FIRST CHOICE Butter, melted
- 40g cacao, sifted
- 200g shortbread biscuits, crushed
- 60ml FIRST CHOICE Chocolate Dessert Topping
- 60ml smooth apricot jam
- 30 cherries, soaked in brandy or rum overnight, drained
- 150g dark chocolate, melted
- Chocolate vermicelli and chopped pistachio nuts for sprinkling
Preparation method:
1. Combine the sifted icing sugar, cacao and the crushed biscuits in a bowl.
2. Mix together the melted butter, chocolate dessert topping and the apricot jam until smooth.
3. Add this mixture to the combined biscuit, icing sugar and cacao. Mix very well together.
4. Take a heaped teaspoon of this mixture and shape around each cherry, roll into firm balls. Place in fridge for 30 minutes to firm up.
5. Melt the chocolate and coat the truffles with the chocolate.
6. Sprinkle over some chocolate vermicelli or chopped pistachio nuts.
