Cheesy Bolognaise Gnocchi Bake

Ingredients:
- 800g gnocchi (homemade or store bought)
- 200g First Choice Mature Cheddar Cheese, grated
- 150g baby tomatoes or sliced tomato for baking/garnish
- Parsley, chopped (and other herbs of choice)
- 60g First Choice Butter
Bolognaise sauce (MEAT SAUCE)
- 30ml olive oil
- 1 onion, thinly sliced
- 1 carrot, peeled and grated
- 3 garlic cloves, crushed
- 15ml rosemary, chopped
- 30ml tomato paste
- 45ml Worcester sauce
- 500g beef mince
- 800g tinned tomatoes, chopped
- 10ml brown sugar
- Salt and black pepper
Preparation method:
1. Preheat the oven to 200°C. You can reduce the heat if necessary.
2. TO MAKE THE MEAT SAUCE: Heat the oil in a large pan and add the onion, carrot, garlic and rosemary. Season, then cook for about 10 minutes, stirring occasionally until tender.
3. Stir in the tomato paste and Worcester sauce, then add the mince. Cook for about 5 minutes, breaking up the meat so that there are no large pieces. Season to your liking.
4. Add the tomatoes and sugar then cook on low heat until the liquid is reduced by half. Taste to adjust the seasoning.
5. Cook the gnocchi in a large pot with salted water until it is just cooked, then drain well.
6. Heat the butter in a frying pan and cook the gnocchi in the butter until golden brown. Work gently to prevent it from breaking.
7. Add the meat to the baking dish, then top with the golden gnocchi, baby tomatoes and your cheese.
8. Bake until golden brown. Sprinkle over the herbs and serve immediately.
