Ingredients:
- 210g self-raising flour
- 85g maize meal
- 5ml baking powder
- 150g FIRST CHOICE Grated Mature Cheddar Cheese
- 45ml chives, chopped
- 30ml flatleaf parsley, chopped
- 5ml salt
- 10ml barbeque spice
- 2 eggs
- 200g creamed sweetcorn (tin)
- 125ml corn kernels
- 100ml FIRST CHOICE Amasi
- 80g FIRST CHOICE Butter, melted
CHILLI HONEY BUTTER DRIZZLE
- 30ml FIRST CHOICE Honey
- 40g FIRST CHOICE Butter, melted
- 5ml chilli flakes
Preparation method:
- Preheat the oven to 180°C.
- Butter and line a bread tin with baking paper.
- Combine the flour, maize, baking powder, grated cheese, herbs, salt and barbeque spice and mix well with a whisk.
- In another bowl combine the eggs, creamed sweetcorn, corn kernels, amasi, melted butter and mix to combine.
- Stir the wet ingredients into the dry and gently mix until combined. Do not over mix.
- Spoon the batter into the prepared loaf tin and bake for ±50 minutes. Loosely cover with tin foil to prevent it from baking too dark if necessary.
To make the chilli honey butter:
- Combine the ingredients and pour it over the warm loaf before removing it from the tin.
- Allow the bread to cool in the tin for 20 minutes before removing and cool completely before slicing.
