Ingredients:

  • 230g cake flour
  • 5g salt
  • 150g FIRST CHOICE Butter, ice cold
  • 60ml cold soda water
  • 15ml lemon juice
  • 100g FIRST CHOICE Mature Cheddar Cheese, grated
  • 15g rosemary, finely chopped
  • 2g cayenne pepper(optional) OR 5g paprika
  • Melted butter for brushing

Preparation method:

  1. Preheat the oven to 190°C.
  2. Sift together the flour and salt. Place in food processor and add the butter. Pulse until mixture resembles fine breadcrumbs. Add the chopped rosemary.
  3. Combine the soda water and lemon juice then add a little at a time to the flour while pulsing. Continue till it comes together as a firm dough. Cover well and rest the dough for one hour in the fridge.
  4. Roll out the dough on a lightly floured surface to a thickness of about 3mm. Brush with a little melted butter then sprinkle over the cheese and cayenne pepper or paprika.
  5. Fold in half and roll out the dough again to a thickness of about 3mm. Now fold the dough in thirds (like a letter). Roll out again.
  6. Cut strips of about 12cm x 1,5cm. Twist each strip and place on a greased or lined baking tray.
  7. Bake for approximately 12 minutes or until golden-brown.
  8. Cool on a cooling rack and store in an air tight container.
