Beef Stroganoff

Ingredients:
- 15ml olive oil
- 500g sirloin steak, trimmed of all fat and cut into thin strips
- 10ml barbecue spice
- 15ml FIRST CHOICE butter
- 250g button mushrooms, halved
- 200ml FIRST CHOICE UHT pouring cream
- 200ml FIRST CHOICE milk
- 15ml cornflour (mixed with a little of the milk to make a paste)
- salt and black pepper to taste
- 1 tsp paprika
- 60g chopped chives or spring onion
- rocket for garnishing
- parmesan shavings
- 400g pappardelle pasta OR pasta of your choice, cooked
Preparation method:
1. Heat the oil in a saucepan on high heat and cook the steak in batches, then remove, season with the barbecue spice and keep aside.
2. Add the butter to the saucepan and stir in the mushrooms until browned.
3. Return the meat to the saucepan with the mushrooms, stir in the cream and milk. Season with salt and pepper and the paprika then add the cornflour paste. Stir and allow to simmer for a few minutes.
4. Serve the beef stroganoff on the cooked pasta with some fresh rocket and parmesan shavings.
