Ingredients:

  • 5 x 250 ml (650 g) cake flour
  • 50 ml baking powder
  • 5 ml salt
  • 250ml (230g) soft brown sugar
  • 125ml (75g) sunflower seeds
  • 200ml (80g) desiccated coconut
  • 2 x 250ml (350g) good quality muesli
  • 300ml (300g) FIRST CHOICE Butter, melted
  • 250ml FIRST CHOICE Amasi
  • 2 eggs

Preparation method:

  1. Preheat the oven to 180 °C.
  2. Mix the flour, baking powder, salt, brown sugar, sunflower seeds, coconut and muesli together in a large bowl.
  3. Mix the melted butter and amasi together. Add the beaten eggs and mix well.
  4. Add to the dry ingredients and mix to make a firm dough.
  5. Press the dough into a well-greased large baking sheet (40cm x 30 cm).
  6. Bake for about 25 minutes and then remove from the oven and cool for at least 10 minutes – it cuts better if lukewarm
  7. Cut into slices and spread them in a single layer on two large baking sheets, with enough space between them for air to circulate and to dry the rusks.
  8. Dry out in the oven at 80 °C for about 4 hours, turning the rusks every hour.
